Um sich aufzuw\u00e4rmen, ein klassisches franz\u00f6sisches Dessert, lauwarm zu verkosten… die ber\u00fchmte Tarte Tatin!
Hier die einfachere Im Glas-Version mit Apfel-Birnen-Geschmack!<\/span><\/h4>\n\n\n\n \n \n\n\n\n

Zutaten f\u00fcr 4 Gl\u00e4schen :
.  3  \u00c4pfel (eher s\u00e4uerlich)
.  3  Birnen (fest)
.  1  Zitrone
.  1\/2  Vanilleschote
.  45 g  Butter
.  2 Prisen Fleur de Sel
.  60 g  Zucker
.  100 g  Bl\u00e4tterteig
.  60 g  Cr\u00e8me fra\u00eeche
.  Zimt<\/p>\n\n\n\n

Vanilleschote spalten und Vanillemark mit 10 g Zucker mischen. Beiseite stellen.<\/p>\n\n\n\n

Zitrone auspressen und Zitronensaft in eine Sch\u00fcssel gie\u00dfen.
\u00c4pfel und Birnen sch\u00e4len und Kerne entfernen. In 6 St\u00fccke schneiden und nach und nach in Zitronensaft w\u00e4lzen, um die Oxidation zu vermeiden.<\/p>\n\n\n\n

Ein helles Karamell vorbereiten: 1\/2 EL Wasser und 50 g Zucker in eine Pfanne geben und stark erhitzen, bis ein goldgelber Karamell entstanden ist.  Vom Herd nehmen und 40 g Butter und die Fleur de Sel einr\u00fchren. \u00c4pfel- und Birnen-St\u00fccke in den Karamell legen und bei schwacher Hitze karamellisieren lassen unter regelm\u00e4\u00dfigem Wenden (ca. 10 Minuten). Abk\u00fchlen lassen.<\/p>\n\n\n\n

Gl\u00e4schen (Boden und Seiten) mit Butter einfetten und mit Vanillezucker bestreuen.
Fruchtst\u00fccke im Gl\u00e4schen flach und eng hinlegen (zuerst am Rand, dann in der Mitte). Zwei Schichten machen.<\/p>\n\n\n\n

Backofen auf 200 Grad vorheizen.<\/p>\n\n\n\n

Bl\u00e4tterteig 1 cm dick ausrollen (wenn schon ausgerollt gekauft, 2 Schichten \u00fcbereinander legen).
Teig 2 cm gr\u00f6\u00dfer als Gl\u00e4schen-Durchmesser ausschneiden, mit Gabel einstechen.
Teigkreise auf Gl\u00e4schen legen, Teig-R\u00e4nder mit Hilfe eines Teel\u00f6ffelstieles an die Innenwand dr\u00fccken.
Mit einer Messerspitze in der Mitte des Teigdeckels ein kleines Loch stechen (damit der Dampf w\u00e4hrend der Backzeit entweichen kann).<\/p>\n\n\n\n

Gl\u00e4schen 20-30 Minuten backen – bis der Teig goldenfarbig ist. V\u00f6llig abk\u00fchlen lassen.<\/p>\n\n\n\n

Um die T\u00f6rtchen aus der Form zu nehmen, Gl\u00e4schenboden in kochendes Wasser legen (Wasserniveau auf Gl\u00e4schenmitte). 5-10 Minuten k\u00f6cheln lassen. Mit einem Topflappen Gl\u00e4schen rausnehmen, trocknen und auf die Servierplatten st\u00fcrzen.<\/p>\n\n\n\n
