La saison des fraises battant son plein \ud83c\udf53\ud83c\udf53\ud83c\udf53, voici une recette de sorbet aux fraises des bois pour garnir vos macarons… une id\u00e9e de dessert rafra\u00eechissante\u00a0\ud83d\udca6
\nDes fruits, du sucre , rien de plus simple et de plus rapide… vous allez prendre go\u00fbt aux sorbets maison ! Et rentabiliser rapidement votre achat de sorbeti\u00e8re – si ce n’est d\u00e9j\u00e0 fait !<\/p>\n

\ud83c\udd92\u00a0Recette \u00e0 r\u00e9aliser la veille (ou m\u00eame quelques jours avant), aussi bien les coques de macarons que le sorbet.<\/p>\n

<\/u><\/b>Confection du sorbet<\/h5>\n
Quantit\u00e9s pour 1\/2 litre de sorbet,\u00a0pour 8 macarons glac\u00e9s ou 8 boules de glace environ :<\/div>\n
300 g de vos fraises pr\u00e9f\u00e9r\u00e9es – des bois\u00a0pour moi\u00a0\ud83d\ude0d, mais vous pouvez bien-s\u00fbr prendre des fraises classiques ou m\u00e9langer.<\/div>\n
80 g d’eau<\/div>\n
100 g de sucre en poudre<\/div>\n
40 g de sirop de glucose\u00a0(que l’on trouve maintenant facilement, indispensable pour que votre glace reste souple)<\/div>\n
10 g de jus de citron<\/div>\n
<\/div>\n
Les fraises des bois ne se lavent pas ! Pour les autres, les laver et les \u00e9queuter.<\/div>\n
Porter l’eau et le\u00a0sucre \u00e0 \u00e9bullition, puis ajouter le sirop de glucose.<\/div>\n
Verser ce sirop sur les fraises et mixer le tout avec le jus de citron.<\/div>\n
Filmer et\u00a0r\u00e9server au frais.<\/div>\n
Quand le m\u00e9lange est froid, le mettre dans votre sorbeti\u00e8re une trentaine de minutes.<\/div>\n
Couler une couche d’environ 1 cm de sorbet dans des cercles de\u00a08 cm de diam\u00e8tre (que vous aurez dispos\u00e9s au fond d’une bo\u00eete \u00e0 fond plat) et les\u00a0faire prendre au cong\u00e9lateur.<\/div>\n
Si vous souhaitez d\u00e9guster ce sorbet simplement, le verser dans une bo\u00eete herm\u00e9tique et le laisser prendre au cong\u00e9lateur.<\/em><\/div>\n
Confection des macarons<\/h5>\n
Pour un dessert pour 8 personnes, r\u00e9aliser 16 macarons d’environ 8 cm de diam\u00e8tre selon ma recette de base<\/a>\u00a0– avec du colorant rouge et\u00a020 min de cuisson.<\/div>\n
Pour un aspect “fraise”, \u00a0j’ai parsem\u00e9 mes coques de macarons de quelques graines de s\u00e9same blond avant cuisson.<\/div>\n
Apr\u00e8s cuisson, les r\u00e9server \u00e0 temp\u00e9rature ambiante jusqu’au lendemain – pour les conserver quelques jours, les mettre au r\u00e9frig\u00e9rateur dans une bo\u00eete herm\u00e9tique.<\/div>\n

Sortir votre sorbet du cong\u00e9lateur.
\nDisposer 8 coques de macarons sur vos assiettes de service.
\nD\u00e9mouler votre sorbet des cercles (\u00e0 l’aide d’un couteau si besoin), les disposer sur vos coques de macarons et d\u00e9poser la deuxi\u00e8me coque dessus.<\/p>\n
