&nbsp;Blanc d&#8217;oeuf &nbsp;= 2 x 55 g (env. 3 oeufs &#8211; \u00e0 temp\u00e9rature ambiante)<\/li>\n<li>150 g &nbsp;&nbsp;Sucre glace<\/li>\n<li>150 g &nbsp;&nbsp;Sucre en poudre<\/li>\n<li>150 g &nbsp; Poudre fine d&#8217;amande&nbsp;(de pr\u00e9f\u00e9rence blanchie)<\/li>\n<\/ul>\n<p><span style=\"color:#ffcc00;\">ASTUCES<\/span><br \/>\n\ud83d\ude09 <em>S\u00e9parer les blancs d&#8217;oeuf deux jours avant, ils seront ainsi plus liquides et la meringue tiendra mieux \u00e0 la cuisson. Les conserver au r\u00e9frig\u00e9rateur dans une &nbsp;bo\u00eete herm\u00e9tique.<\/em><\/p>\n<p>\ud83d\ude09<em>&nbsp;Torr\u00e9fier la poudre d&#8217;amande 10 minutes au four (150\u00b0 &#8211; chaleur tournante), pour intensifier son parfum. Laisser refroidir, avant utilisation. Si besoin, la repasser au&nbsp;robot coupe pour la rendre plus fine.<\/em><\/p>\n<p>Passer le sucre glace et la poudre d&#8217;amande au travers d&#8217;un&nbsp;tamis fin, au dessus d&#8217;une jatte. Y verser la moiti\u00e9 des blancs d&#8217;oeuf, sans m\u00e9langer.<\/p>\n<p>Pr\u00e9parer l&#8217;autre moiti\u00e9 des blancs d&#8217;oeuf pour les battre.<\/p>\n<p>Confectionner le sirop de sucre : mettre 50g d&#8217;eau et le sucre en poudre dans une petite casserole. Y mettre le thermom\u00e8tre et chauffer \u00e0 feu fort jusqu&#8217;\u00e0 115\u00b0C.<\/p>\n<p>Quand le sirop atteint 100\u00b0C, commencer \u00e0 monter les blancs d&#8217;oeuf en neige. Quand le sirop est \u00e0 115\u00b0C, le verser doucement le long du bol, en continuant de fouetter les blancs jusqu&#8217;\u00e0 la consistance souhait\u00e9e, dit &#8220;bec d&#8217;oiseau&#8221; (cf. photo ci-dessous). Recouvrir vos plaques de four&nbsp;de papier cuisson.<\/p>\n<p>Pr\u00e9parer une poche \u00e0 douille avec la douille lisse et y verser l&#8217;appareil. Fa\u00e7onner des ronds de p\u00e2te d\u2019environ 3 cm de diam\u00e8tre. Si vous ne disposez pas d&#8217;autant de plaques &#8211; ou si la chaleur dans votre four est tr\u00e8s in\u00e9gale entre le haut et le bas &#8211; faites cuire vos coques plaque par plaque.<\/em><\/p>\n<p>\ud83d\ude09 <em>Pour confectionner des coques de taille identique, je vous recommande vivement d&#8217;utiliser un gabarit, que vous glisserez sous votre papier cuisson. Vous gagnerez ainsi du temps au moment de constituer des paires ! Pour vous aider, en voici un \u00e0 imprimer au format A4 :&nbsp;<a href=\"https:\/\/macaronsundco.com\/wp-content\/uploads\/2014\/08\/din-a4-macarons-schablone.pdf\">DIN A4 Macarons-Schablone<\/a>&nbsp;<\/em><\/p>\n<p>Enfourner les coques pour 15 minutes environ.&nbsp;A la sortie du four, faire glisser le papier avec les coques sur votre plan de travail. Apr\u00e8s quelques&nbsp;minutes, les coques doivent se d\u00e9coller facilement du papier. &nbsp;En retourner la moiti\u00e9.<\/p>\n<p>Mettre la garniture choisie (selon une de mes recettes sur&nbsp;ce site, \u00e0 confectionner de pr\u00e9f\u00e9rence la veille) dans une poche \u00e0 douille et garnir g\u00e9n\u00e9reusement la moiti\u00e9 des coques. Les recouvrir des autres coques, en pressant tr\u00e8s l\u00e9g\u00e8rement.<\/p>\n<p>Entreposer les macarons c\u00f4te \u00e0 c\u00f4te sur un plat au frigo pour une nuit&nbsp;minimum, avant de les consommer&nbsp;! Ils n&#8217;en seront que meilleurs ! Au-del\u00e0, vous pourrez les conserver sur la tranche dans une bo\u00eete herm\u00e9tique au frais quelques jours.<\/p>\n<p>Amusez-vous bien !
