Mindestens 15 Minuten (idealerweise \u00fcber Nacht) einziehen lassen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ofen auf 100 Grad vorheizen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Die Sahne mit Vanille kurz aufkochen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eigelb mit Zucker verquirlen, bis Aufl\u00f6sung.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Die hei\u00dfe Sahne durch ein feines Sieb&nbsp;darauf gie\u00dfen und verr\u00fchren.  Die Vorbereitung ein paar Minuten ruhen lassen und mit Hilfe eines L\u00f6ffels den Schaum abzusch\u00f6pfen, der sich oben gebildet hat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Die Vanillecreme&nbsp;langsam in die F\u00f6rmchen&nbsp;f\u00fcllen (immer, um Schaumbildung auf den Cremes zu vermeiden).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1 Stunde backen. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am Ende der Backzeit sollten die Cremes noch leicht zittern.<br>Lassen Sie sie auf Raumtemperatur und dann im K\u00fchlschrank abk\u00fchlen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Erst kurz vor dem Servieren: Die Cremes mit einer d\u00fcnnen Schicht braunen Zuckers bestreuen. Mit Hilfe eines K\u00fcchenbrenners** karamellisieren. Wasser kochen. Die F\u00f6rmchen in eine Auflaufform stellen. Die Vanillecreme nur dann in die F\u00f6rmchen gie\u00dfen. Auflaufform auf den Rost des hei\u00dfen Backofens stellen.
