F\u00fcr diese festlichen Macarons<\/span><\/strong> \u2b50\ufe0f <\/p>\n\n\n\n

habe ich eine leichte Ganache gemacht, die vor der F\u00fcllung wie Schlagsahne geschlagen wird.
Sie wird mit Marc de Champagne<\/em> aromatisiert – Champagner w\u00e4re nicht geschmackvoll genug.
Es gibt Marc de Champagne<\/em> in Form von Gel (oder Paste), die sich leichter zum Backen verwenden l\u00e4sst.<\/p>\n\n\n\n

REZEPT<\/p>\n\n\n\n

Macarons-H\u00e4lften nach meinem Macarons-Grundrezept <\/a>backen (ohne Farbe). <\/p>\n\n\n\n

Zutaten<\/span> ca. 50 kleine Macarons:
125 g wei\u00dfe Schokolade<\/a>
65 g + 110 g Schlagsahne (mind. 30% Fett)
10 g Marc de Champagne-Gel
Goldpailletten-Lebensmittelspray<\/a><\/p>\n\n\n\n

Die Schokolade im Wasserbad schmelzen lassen. 
Die 65 g Sahne kurz aufkochen, auf die geschmolzene Schokolade gie\u00dfen und mit einem Teigschaber kr\u00e4ftig vermengen, bis die Ganache sch\u00f6n glatt ist.
Das Marc de Champagne-Gel darin verr\u00fchren. Die kalte 110 g Sahne dazugeben und sch\u00f6n mischen.
Kalt stellen (mindestens 2 Stunden, idealerweise \u00fcber Nacht).<\/p>\n\n\n\n

Wenn die Ganache ganz kalt ist, schlagen Sie sie etwa 10 Minuten lang bei mittlerer Geschwindigkeit, bis sie wie Schlagsahne aussieht.
Die Ganache in einen Spritzbeutel f\u00fcllen und sofort auf die H\u00e4lfte der Macaron-Schalen spritzen.
Die andere H\u00e4lfte daraufsetzen und leicht andr\u00fccken.
Die fertigen Macarons mit dem Gold-Spray bespr\u00fchen.<\/p>\n\n\n\n
