Pour cela ne\u00a0faites fondre que les 2\/3 de la quantit\u00e9 au bain-marie \u00e0 feu doux. Puis ajoutez le 1\/3 restant hors du feu pour faire chuter la temp\u00e9rature rapidement. M\u00e9langez jusqu&#8217;\u00e0 ce que tout soit parfaitement fondu. Puis r\u00e9chauffez au bain-marie \u00e0 feu tr\u00e8s doux,\u00a0afin de le travailler.<\/em><\/p>\n<p>. \u00a025\u00a0 \u00a0 \u00a0Noisettes enti\u00e8res<br \/>\n. \u00a025 \u00a0 \u00a0 Pistaches vertes non sal\u00e9es<br \/>\n. \u00a025 \u00a0 \u00a0 Raisins blonds<br \/>\n. \u00a025 \u00a0 \u00a0\u00a0Morceaux\u00a0de\u00a0Gingembre confit *<\/p>\n<p>\ud83d\ude09 <em>Variez les plaisirs : vous pourrez mettre sur ces palets de chocolat\u00a0vos noix ou fruits confits pr\u00e9f\u00e9r\u00e9s.<\/em><\/p>\n<p style=\"text-align:justify;\">Poser une feuille de papier sulfuris\u00e9 sur une surface froide et lisse.<\/p>\n<p style=\"text-align:justify;\">Faire fondre le chocolat au\u00a0bain-marie, comme indiqu\u00e9 ci-dessus.<\/p>\n<p>Confectionner les disques de chocolat : d\u00e9poser une cuill\u00e8re \u00e0 caf\u00e9 de chocolat fondu et former un disque avec le dos de la cuill\u00e8re. Renouveler l&#8217;op\u00e9ration jusqu&#8217;\u00e0 \u00e9puisement du chocolat.<br \/>\n\ud83d\ude09\u00a0<em>Vous pouvez \u00e9galement utiliser des moules en silicone d&#8217;un diam\u00e8tre de 4-5 cm.<\/em><\/p>\n<p style=\"text-align:justify;\">Sur chaque disque de chocolat, disposer harmonieusement une noisette, une pistache, un raisin et un morceau de gingembre confit *<br \/>\nLaissez refroidir compl\u00e8tement (minimum 2 heures), avant de d\u00e9coller les chocolats du papier.<\/p>\n<h4 style=\"text-align:center;\"><span style=\"color:#000000;\">* <\/span><span style=\"color:#ff4800;\">Gingembre confit<\/span><\/h4>\n<p style=\"text-align:justify;\">Vous trouverez bien s\u00fbr du gingembre confit dans votre magasin\u00a0pr\u00e9f\u00e9r\u00e9. Y ajouter les morceaux de gingembre, m\u00e9langer et laisser cuire\u00a01 h 10 \u00e0 feu doux \u00e0 couvert.<\/em><br \/>\n<em>Laisser \u00e9goutter 2 h minimum (voire une nuit). Mettre 30 g de sucre dans un bol et y m\u00e9langer\u00a0soigneusement les morceaux de gingembre confit. Mettre le tout dans une passoire fine bien s\u00e8che et secouer pour \u00e9liminer le surplus de sucre. Laisser s\u00e9cher \u00e0 l&#8217;air libre 24 h, puis\u00a0conserver dans une bo\u00eete herm\u00e9tique.<\/em><\/p>\n<p style=\"text-align:justify;\">Le gingembre confit se mange comme une\u00a0friandise. Il pourra \u00e9galement \u00eatre utilis\u00e9 dans d&#8217;autres g\u00e2teaux.
