- 1 Potimarron (env. 600 g)<\/li>\n
- 1 Oignon<\/li>\n
- \u00bd litre Bouillon de volaille (ou de l\u00e9gumes)<\/li>\n
- 20 g Beurre<\/li>\n
- 20 cl Cr\u00e8me liquide enti\u00e8re<\/li>\n
- Piment d’Espelette<\/li>\n<\/ul>\n
- \n
- 200 g Girolles ou autres chanterelles, trompettes, …<\/li>\n
- 10 g Beurre<\/li>\n
- Sel<\/li>\n<\/ul>\n
Laver le potimarron (pas besoin de l’\u00e9plucher). Le couper en deux et le vider de ses p\u00e9pins \u00e0 l’aide d’une cuill\u00e8re. Le d\u00e9couper en morceaux.<\/p>\n
Emincer l\u2019oignon. Dans une grande casserole, faire revenir l\u2019oignon avec le beurre 5 minutes.<\/p>\n
Ajouter ensuite les morceaux de potimarron et le faire suer quelques minutes. Mouiller avec le bouillon \u00e0 hauteur et laisser cuire \u00e0 feu doux, \u00e0 couvert, 30 minutes.<\/p>\n
Pendant ce temps, laver soigneusement les champignons sous un filet d’eau, les s\u00e9cher. Faire chauffer une po\u00eale \u00e0 feu moyen. Y mettre les champignons et leur faire rendre leur eau. Puis ajouter le beurre, m\u00e9langer d\u00e9licatement et laisser cuire \u00e0 feu doux encore 20 minutes. Saler et r\u00e9server au chaud.<\/p>\n
Lorsque le potimarron est cuit, ajouter la cr\u00e8me et une bonne pinc\u00e9e de piment d’Espelette. Porter \u00e0 \u00e9bullition. Mixer le tout jusqu\u2019\u00e0 l\u2019obtention d\u2019une cr\u00e8me onctueuse (si trop \u00e9paisse, ajouter du bouillon).<\/p>\n
Servir la soupe bien chaude en d\u00e9posant sur chaque assiette une bonne cuiller\u00e9e de champignons.<\/p>\n
