F\u00fcr dieses Rezept m\u00fcssen wir einen vollmundigen, gelierten Gl\u00fchwein herstellen, mit dem wir unsere Ganache w\u00fcrzen werden.
Ich empfehle Ihnen, einen fruchtigen und leichten Qualit\u00e4tsrotwein zu verwenden.
Da der Wein hier f\u00fcr seine Gelierung gekocht werden muss, werden diese Macarons am Ende alkoholfrei sein.<\/p>\n\n\n\n

F\u00fcr das Geb\u00e4ck \u2026<\/span><\/strong><\/p>\n\n\n\n

Macarons-H\u00e4lften nach meinem Macarons-Grundrezept <\/a>backen.
Das Baiser mit Lebensmittelf\u00e4rben<\/a> f\u00e4rben (ich habe hier Lila und Rot gemischt) und die Macarons vor dem Backen mit Zimt leicht bestreuen.<\/p>\n\n\n\n

F\u00fcr die F\u00fcllung \u2026<\/span><\/strong><\/p>\n\n\n\n

ZUTATEN f\u00fcr ca. 50 Macarons<\/p>\n\n\n\n

Gl\u00fchwein<\/strong>: 150 ml Rotwein, 15 g Rohrzucker, 5 g Pektin (oder Gelfix f\u00fcr Konfit\u00fcre), 1 Gew\u00fcrznelke, 1\/4 Zimtstange, 1\/4 Sternanis, 1\/4 Orange (unbehandelt).<\/p>\n\n\n\n

Ganache<\/strong>: 200 g wei\u00dfe Schokolade.<\/p>\n\n\n\n

Am Vortag<\/span>: Rotwein mit Zucker und Pektin einige Minuten kochen lassen.
Ein Viertel der Orange zesten<\/a> und den Saft auffangen.
Alles mit den Gew\u00fcrzen in den Gl\u00fchwein geben.
Zudecken und \u00fcber Nacht ziehen lassen. <\/p>\n\n\n\n

Schokolade grob hacken und im Wasserbad schmelzen lassen.
Gl\u00fchweingelee durch ein Sieb durchpressen und 100 g wiegen.
Mit der geschmolzenen Schokolade kr\u00e4ftig vermengen, bis die Ganache sch\u00f6n glatt ist.
Die Ganache in einen Spritzbeutel f\u00fcllen und kalt stellen, bis sie fest geworden ist.<\/p>\n\n\n\n

Die F\u00fcllung auf die H\u00e4lfte der Macaron-Schalen spritzen.
Die andere H\u00e4lfte daraufsetzen und leicht andr\u00fccken.<\/p>\n\n\n\n
