Alle Gem\u00fcse waschen. Paprika in Scheiben, Auberginen und Zucchini in W\u00fcrfel (ca. 2 cm) schneiden, getrennt halten.<\/p>\n\n\n\n

\ud83e\uded1 Die Paprikast\u00fccke in den Topf geben. Abdecken und bei niedriger Hitze weiterkochen.<\/p>\n\n\n\n

\ud83c\udf46 Zwei Essl\u00f6ffel \u00d6l in einer Pfanne erhitzen, die Auberginenw\u00fcrfel darin anbraten. Wenn sie weich und auf allen Seiten leicht gebr\u00e4unt sind, in die Cocotte geben.
Zwei Essl\u00f6ffel \u00d6l in derselben Pfanne erhitzen und den Vorgang f\u00fcr die Zucchiniw\u00fcrfel wiederholen.<\/p>\n\n\n\n

Das Tomatenmark zum Tomatenp\u00fcree geben. Mischen und alles in die Cocotte geben und unterheben.<\/p>\n\n\n\n

Bei sehr niedriger Hitze mindestens zwei, bis zu vier Stunden k\u00f6cheln lassen!
Wie schon erw\u00e4hnt, eine Ratatouille ist fertig, wenn es eine leicht braune Farbe bekommt.
Achten Sie darauf, dass immer ein wenig Fl\u00fcssigkeit vorhanden ist, damit sie nicht am Topfboden anbrennt. Geben Sie bei Bedarf w\u00e4hrend des Kochvorgangs etwas Wasser hinzu.

Ich pers\u00f6nlich mag die Ratatouille lieber ohne Paprika, oder indem ich ihn durch Fenchel ersetze.
K\u00f6stlich auch die “Boh\u00e9mienne”, Cousine der “Ratatouille”, sie enth\u00e4lt nur Tomaten und Auberginen.
